Infinity is not a value but rather a concept or an idea. In short infinity is the end of your counting capabilities. Just same way expensive and cheap are not real words that should be used in proper economics discussion.

When you evaluate a function from -ve infinity to +ve infinity with respect to z in a complex plane, infinity is a value of z to that limit even though by itself, is just an expression of how big a number is.
