You could absolutely drop the “to” so that it’s an implied infinitive, leaving you with:
1. “She helped (me) write the project.”
2. Or “She helped write the project.”

NB: The second option is a bit less formal, but both are correct. The use of "to" is more common in British English, while the omission of "to" is more common in American English.
