Job Description (Roles and Responsibilities)

Main purpose of job:
The Chef will be based at the High Commissioner’s Residence and report to the Residence Manager. The Chef will have overall responsibility for the management of the Official Residence kitchen, hygiene and stock management ensuring a high quality of food preparation, service and delivery for the British High Commission.

Roles and responsibilities:
  • Determine production schedules and staff requirements necessary to ensure timely delivery of services, manage stock and inventory accordingly. Compile food shopping list and checking the quantity and quality of received products
  • Inspect supplies, equipment, and work areas to ensure conformance to establish hygiene and safety standards
  • Source food locally, ensuring these are stored and processed in accordance with good hygiene management practices
  • Oversee and carry out kitchen cleaning as part of the Hygiene Management Plan. Maintain records of cleaning schedule, stock of cleaning materials
  • Monitor sanitation practices and ensure PPE / uniform used to ensure that employees follow standards and regulations
  • As a key member in the UK’s Gastrodiplomacy network, plan creative menus with Residence Manager / High Commissioner aimed at promoting the best of UK gastronomy
  • Liaise with Residence Manager / Event Organisers to ascertain if invited guests are affected by allergens. Ensure food service staff are briefed on allergen content in the food and report back if any guests are affected by allergens prior to service. Maintain an Allergen Awareness plan
  • Manage temporary kitchen staff hired for specific functions. Instruct other cooks/helpers in the preparation, cooking, garnishing and presentation of food
  • In collaboration with the residence gardening team, maintain and cultivate the Kitchen Garden
  • Ensure menus are costed appropriately and delivered within the event budget
Essential qualifications, skills and experience
  • Secondary level education
  • Diploma in Cookery or equivalent
  • Food Safety / Food Hygiene / HACCP Certificate
  • Previously held role as Head Chef (min 3 years’ experience) or Sous Chef
  • 5 years’ experience in minimum 4-star hotel or similar
Language requirements:
Language: English. Kiswahili is essential
Level of language required: Fluent
Desirable qualifications, skills and experience
  • Computer literate (Word, Excel, Email, Internet) is essential
