I went through a similar trip earlier this year and what really helped was checking how other travelers manage their routes and stops. If you're into planning group travels, especially outside TZ, I recommend checking Punta Cana Large Group. I used them once for a big trip and they made things a lot simpler without overcharging. For Zanzibar, Stone Town was a favorite—walkable, full of history, and great local food.
