    Habari zenu wa JF Chef naomba kwa anayejua jinsi ya kupika ndizi za nazi pia hizo ndizi ni lazima ziwe mbivu au mbichi?

    Ndizi lazima ziwe mbichi...

    Kwanza chemsha nyama mpaka iive, hiyo nyama iwe umetia chumvi, thomu kidogo na black peper till maji ya kutosha ili iwe na supu, tia ndizi ulizozikata, vitunguu, nyanya, chumvi na binzari ukipenda iache ichemke mpaka ndizi imebakia kidogo kuiva tia tui zito la nazi. Wenyewe wainaita tui bubu ama unatia coconut power, iache ichemke kama dakika 5.

    Tayari kwa kula

    NB, ndizi inaiva na supu ya nyama sio mimaji ya kuongeza unaweza tia soup cubes kama unazo.

    Kuna ndizi aina tofauti ambazo waweza pika kwa nazi. Utofauti ninao ongelea hapa ni ule kati ya ndizi mbichi (ganda la kijani) na zile ambazo nimeanza kuivia ila hazijaiva kabisa (yani ganda la njano); Hizi ndizi za ganda la njano ni maarufu kwa jina la mzuzu (watu wa Mbeya Wanyakyusa huziita mafufu).

    Ndizi mbichi/kijani (Haijalishi ni Bukoba/Uganda/Matoke n.k.

    Ya Kuzingatia kwa ndizi zozote zile mbichi;


    • Mara nyingi hizi ndizi hupendeza zaidi zikichanganywa na nyama ambayo waweza chagua tokana na upenzi wako. Inaweza kuwa samaki, kuku, mbuzi ama ng'ombe. Hivo ukishajua utakacho pia unaandaa mapema. Katika maelekezo yangu nitatumia nyama ya ng'ombe.
    • Kuna viungo ambavo hutumika katika upishi. Hivo viungo pia tokana na uzoefu na ujuzi/mapenzi ya mpishi hutegemea pia. Kwa hapa inatakiwa pawe na vitunguu maji, vitungu saumu, carrot, pili pili hoho na Cabbage.
    • Nazi ni tokana pia na mapenzi ya mtu. Kuna wale ambao wanaamini kuwa nazi ya dukani sio nzuri na kwamba haina nguvu kama ile ya kuandaa mwenyewe. Kikubwa katika hili ni kutumia nazi ambayo kweli ni nzito vya kutosha. Kwa hapa mie nitafanya short cut. Yaani nazi ya pakiti tena Azam (upande wangu nazi yao ya maji ya Azam naona to date ipo splendid).

    Maandalizi ya ndizi mbichi (yaani za kijani)


    • Chukua kama chane mbili za ndizi zilizokomaa vizuri katika idadi ya haraka haraka ndizi zaweza kuwa kama 20-25 hivi. Mwenya vizuri na hakikisha unapaa ule utomvu unaobaki ukimwenya ndizi. Zikoshe vizuri ukiahakikisha umezisafisha hadi kuwa safi kabisa kiasi kwamba ukiziweka katika maji maji yanabaki safi. Kata walau kila nzizi itoke vipande viwili ama vitatu.
    • Chukua nusu kilo/kilo moja ya nyama uikate vipande vidogo kiasi na kuichemsha. Kama ada kabla ya kuchemsha walau weka ndimu/limao, tangawizi na chumvi. Hakikisha inaiva vema ila hailainiki sana na ibaki na soup kiasi.
    • Chukua vitungu maji kama viwili vikubwa ukate vipande, chukua nyanya kubwa kama nne ukate vipande vidogo ama u grate. Chukua carrot mbili, moja kata katika vipande nyengine moja u grate. Chukua pili pili hoho ukate vipande visiwe vidogo sana (hoho moja ya medium size waweza toa hata vipande kwa urefu kama 7.
    • Chukua sufuria ya zaizi ya kutosha (sio upike pishi limejaa hadi mdomo wa sufuria); Injika jikoni na tia mafuta ya kupikia. Yakipata moto vizuri weka vitungu maji na hakikisha una mwiko karibu kukoroga mara kwa mara kuhakikisha vitungu vinaiva kwa uwiano sawa. Vikiwa karibu na kubadilika rangi kuwa brown weka vitungu saumu baada ya dakika kama moja weka nyanya zako.

    Nyanya ikiiva vema na kuanza kushika katika chombo chako cha upishi tia ndizi, carrot uzizokata (sio ulizo grate), na hoho kwa pamoja. Koroga mara kwa mara sababu wakati huu kunakuwa kuna maji kidogo ila inakuwa supported na mafuta kwa mbali. Baada ya kama dakika 7-10 chukua ile nyama yako uliochemsha na soup yake umimine kwenye mchanganyiko huo. Koroga then ongeza kiasi cha chumvi cha kutosha then uache iendelee kuchemka.

    Zingatia kuwa kiasi cha maji/soup ambacho unaacha kwenye nyama ni makadirio ambayo yaweza tosha kuivisha zile ndizi. Maji hayatakiwi mengi sana sababu ndizi inatakiwa ziive vizuri sana ila zisilainike kiasi kwamba zaweza monyoka kabisa zikisha iva.


    • Baada ya hapo. Ukiona kuwa karibu zinaiva tia carrot tena ile ambayo ilikuwa grated (take note sio lazima ila inapendeza). Then zikishaiva, hapa ndio hatua ya mwisho ya kuweka nazi. Naomba nitumie kipimo kidogo kuliko vyote vya nazi ambayo huuzwa na Azam cha 65ml; mie hizo kwa kipimo hicho cha ndizi nitatumia 4 packets, yaani 260ml. Zichanganye zote pembeni utie kwa pamoja huku ukikoroga gently kama kwa dakika 5. Ikisha jichanganya vema unaacha ichemke kama kwa dakika 10 hivi na pishi lako linakuwa tayari.

    Maandalizi ya ndizi mzuzu zilizobadilika rangi

    Maandalizi ya ndizi mzuzu ambazo tayari zishabadilika rangi. Hizi ndizi wengi huzitumia katika pishi ya kuzikaanga na mara nyingi hupatikana mitaani kwa wapika chips. Hizi waweza pia zipika kwa kuzichemsha na kutia nazi.​

    Chukua ndizi hizo kama kumi na slice kila mzuzu in three thin pieces kufuata urefu, then uzikate kati. Weka katika sufuria tia chumvi kidogo na maji then utenge. Kama moto ni mzuri wa kutosha huwa zaiva kwa dakika 20-30 tu sababu ni laini sana. Zikisha iva waweza tia iriki iliyosagwa vizuri kama almost robo kijiko cha teaspoon, unataia sukari kama kijiko kimoja cha teaspoon. Ukikoroga hapo ndipo unatia nazi yako. Kwa nazi ya ujazo wa 65ml unatia pakiti mbili ambapo ikichemka bada ya kadika 7-10 inakuwa imeiva.​

    • Weka nyama katika sufuria tia kijiko kimoja cha kitunguu thomu na tangawizi, chumvi na ndimu kisha chemsha hadi iive.
    • Menya ndizi ukatekate
    • Weka mafuta katika sufuria tia kitunguu maji kilokatwakatwa ukaange kidogo tu kisha tia nyanya/tungule uendelea kukaanga.
    • Tia tangawizi na thomu ilobakia.
    • Tia ndizi, kaanga kidogo kisha tia supu ya nyama na nyama yake.
    • Ziache ndizi ziive zikiwa tayari tia tui la nazi zikiwa tayari.

    Kuna ndizi zinaitwa bokoboko, zikiiva zinatengenezwa banana fritters.
    1. Osha ndizi zilizoiva kiasi, kisha menya na kupasua katikati
    2. Chekecha unga kwenye bakuli kiasi. Tia chumvi a pinch
    3. Pasua yai moja ama mawili ndani ya unga. Anza kukoroga na mwiko wa mbao ama plastic ama spatula kwa mizunguko ya duara upande mmoja tu. Ni kama unakoroga chapati za kumimina. Mchanganyiko uwe na uzito wa uji unaomiminika taratibu.
    4. Weka mafuta kiasi kwenye kikaango ama frier. Pasha moto
    5. Tumbukiza ndizi bokoboko zilizomenywa ndani ya mkorogo wa unga, chomoa na uma na uweke kwenye mafuta ya moto kiasi. Geuza pande zote ziwe brown.
    6. Ipua kwa kutumia uma ili kuchuja mafuta, weka kwenye chujio ama sahani yenye bloating ama kitchen paper.

    Zinafaa kama snack ama mlo zikiambatana na mboga za majani na kitoweo. Zinafaa kwa safari, take away ama picknick.
