    BILA shaka unapoingia dukani au supermarket kununua juisi ya box, huwa unaamini kuwa iliyoandikwa ‘100% Puer Juice’ huwa ni halisi na ndiyo bora. Kwa kukuongezea imani zaidi, watengenezaji wameweka na neno ‘No Sugar Added’ au ‘No preservatives’ (haikuongezwa sukari wala dawa)!

    Kuanzia leo elewa kwamba hayo ni maneno ya kibiashara tu, ukweli hauko hivyo! Umewahi kujiuliza kwa nini maboksi yote ya juisi hiyo yawe na ladha moja tu. Sote tunajua kwamba, kama ni juisi ya machungwa kwa mfano, ukila machungwa matano, yote hayawezi kuwa na ladha moja!


    Lakini kwa juisi za maboksi imewezekana kuwa na ladha moja kwa sababu za kikemia zinazofanywa kiwandani wakati wa kuhifadhi juisi hiyo ambayo huweza kukaa kwa muda mrefu bila kuharibika. Hivyo siyo kweli kwamba unachokunywa ni asilimia 100 ‘pure’.

    NINI KINACHOTOKEA?
    Ni kweli kwamba ‘100% pure juice’ hutokana na matunda halisi kama vile machungwa, mananasi, embe, n.k, lakini mchakato wake wa kukamua, kuhifadhi na hatimaye kumfikishia mlaji ndiyo wenye dosari za kiafya.

    Kinachofanyika baada ya tunda kukamuliwa ni kuhifadhi juisi yake kwenye matanki maalumu makubwa ya viwandani. Ili juisi hiyo iweze kukaa kwa muda mrefu bila kuharibika, wanalazimika kuondoa hewa yake asilia ya oksijeni (mchakato unajulikana kitaalamu kama ‘deaeration’), kitendo ambacho huifanya juisi hiyo kupoteza ladha yake ya asili.

    NINI HUFANYIKA KUREJESHA LADHA YA MATUNDA?
    Kwa mujibu wa mtandao wa ‘Food Renegade’ wa nchini Marekani unaojishughulisha na masuala ya lishe na kuhimiza ulaji wa vyakula asilia, makampuni yanayozalisha juisi hukodisha makampuni yenye ujuzi wa kutengeneza ladha mbalimbali za matunda na manukato.

    Makampuni hayo husimamia utengenezaji wa maboksi ya kuhifadhia juisi ambayo huwekwa ladha na harufu ya matunda husika. Inaelezwa zaidi kuwa makampuni hayo ndiyo yanayotengeneza pia manukato (perfumes) maarufu duniani, kama vile Dior na Calvin Klein.

    Lakini cha kushangaza, virutubisho vinavyotumika kutengenezea ladha hiyo bandia haviorodheshwi kwenye boksi na wenyewe wanajitetea kwa kusema kuwa ladha hiyo haiwezi kuorodheshwa kama sehemu ya ‘ingredients’ kwa sababu hutengenezwa kutokana na tunda lenyewe, ingawa wataalamu wengine wanadai utengenezaji wake huhusisha kemikali zingine ambazo siyo za asili.

    Mtaalamu mwingine kutoka Taasisi ya Sera ya Kilimo na Biashara nchini Marekani, Bi. Alissa Hamilton J. D (PhD), ameelezea kwa undani jinsi juisi ya machungwa inavyotengenezwa kiwandani. Undani huo umo kwenye kitabu chake cha; ‘Squeezed: What You Don’t Know About Orange Juice’. (Kitu usichokijua kuhusu juisi ya machungwa).

    Katika kitabu hicho, mwanadada huyo anasema kuwa ni muhimu kila binadamu kujua kwa undani jinsi chakula chake kinavyoandaliwa, kwa sababu maelezo au lebo inayowekwa kwenye boksi, siyo tu haisemi ukweli, bali pia hailezi ukweli wote.

    Anasema kwamba, kama kweli ‘pure orange juice’ tunayokunywa ilipatikana baada ya kukamuliwa chungwa peke yake na kuwekwa kwenye boksi, basi bila shaka ladha ingekuwa tofauti kati ya boksi moja na lingine, kwa sababu chungwa moja linatofautiana ladha na chungwa lingine. – mengine matamu, mengine makali.

    Mbali na hilo, kila kampuni inayotengeneza juisi ya machungwa ina ladha yake. Juisi ya machungwa inayotengenezwa na kampuni ya Tropicana ina ladha tofauti na juisi ya machungwa inayotengenezwa na kampuni ya Ceres, sababu ya tofauti hiyo inaacha maswali mengi zaidi kuliko majibu.

    Aidha, Hamilton anaendelea kueleza mchezo mchafu unaochezwa na watengeneza juisi viwandani kwamba ladha ya juisi hiyo ya machungwa hutofautiana pia kati ya nchi na nchi, kwani viwanda huweka aina ya ladha kwenye chungwa kulingana na vile ambavyo wanapenda watu wa eneo inakokwenda.

    Juisi inayotengenezwa kwa ajili ya nchi za Amerika Kaskazini huwa na kiwango kikibuwa cha kirutubisho aina ya ‘ethyl butyrate’, ambacho ni moja ya kemikali inayotumika sana kwenye utengenezaji wa manukato na ladha. Mbali ya kirutubisho hicho kuwa na uwezo wa kutengeneza aina mbalimbali za ladha za matunda, lakini pia hakina gharama (cheap).

    HATUA GANI ZA KUCHUKUA SASA?
    Kama makala haya yatakuwa yamekushitua na kukushangaza, jua hauko peke yako. Hata hivyo, lengo kubwa la makala haya ni kukufumbua macho ujue juisi unayokunywa siyo salama kiasi gani na uwe na uamuzi wa kuicha au kuendelea kuitumia kwa hiyari yako mwenyewe, lakini siyo kwa kudanganywa na maelezo ya uongo ya kibiashara yanayowekwa juu yake.

    Kama ambavyo mwandishi wa kitabu hicho Bi. Hamilton anavyosema: “Lengo la kitabu changu siyo kukataza watu kunywa juisi, isipokuwa kuwafanya wakijue vizuri wanachokinywa. Watu wana haki ya kujua ni kwa kiasi gani utengenezaji wa juisi hivi sasa umekuwa wa kibiashara zaidi, hii itawafanya wawe na maamuzi sahihi kuhusu afya zao.”

    Ingawa ni vigumu sana kuepuka ‘kuingizwa mkenge’, lakini unaweza kujiepusha na madhara ya kiafya yatokanayo na unywaji wa juisi hizi ‘feki’ kwa kupendelea kunywa juisi uliyoitayarisha mwenywe nyumbani na kuacha kununua vyakula au vinywaji ‘ready made’, hasa kwa vile ambavyo vinapatikana kwa wingi sokoni.

    TAHADHARI
    Kwa ujumla matunda na juisi zake zina virutubisho vingi muhimu kwa ustawi wa afya ya binadamu, lakini tahadhari inatolewa kwa wanaopenda kunywa kiasi kingi cha juisi za matunda, hasa juisi ya machungwa ambayo inaelezwa kuwa na sukari nyingi.

    Kiasi cha glasi moja ya juisi ya machungwa ina wastani wa gramu 25 za ‘fructose’, (sukari), kiwango ambacho ni cha mwisho kabisa anachotakiwa mtu kutumia kwa siku moja. Hii ina maana kama utakunywa zaidi ya glasi moja pamoja na vinywaji vingine vinavyotumia sukari, kama vile chai, tayari utakuwa umezidisha kiwango kinachopendekezwa kwa siku.

    Iwapo utakuwa na tatizo la unene na unahitaji kupunguza uzito, ni vyema ukapunguza sana au ukajiepusha kabisa na uywaji wa juisi za matunda, kwa sababu kiwango cha sukari kilichomo ni zaidi ya wastani unaotakiwa.

    Ili upate faida za virutubisho vinavyopatikana kwenye matunda, yakiwemo machungwa, unashauriwa kula matunda hayo kama yalivyo kuliko kukamua juisi na kutupa makapi yake. Inaelezwa kwamba sukari iliyomo kwenye chungwa inapoliwa pamoja na nyama zake (fibre), sukari hiyo huwa haina madhara kwani huweza kujichanganya kwenye mfumo wa damu bila kuleta athari zozote kwa mlaji.

    Hivyo ushauri wa ujumla unatolewa kwamba pendelea zaidi kula matunda na mboga za majani kama zilivyo kuliko kunywa juisi zake. Kwa kufanya hivyo utajiepusha na uwezekano wa kusumbuliwa na ugonjwa wa kisukari. Iwapo utakunywa, basi kunywa nusu glasi au isizidi glasi moja kwa siku. Asanteni.

    tusiinge mambo ya kigeni bali tutumie mazao yetu ya asili tutapunguza magonjwa mengi sana kwa kuwa nchi yetu imebarikiwa kila sehemu ina neema yake tuleni sana (Parachichi,Ndizi, machungwa,magimbi,zabibu, matango, tikitimaji,etc) yanapatikana pande zote za nchi

    Thanks alot pal! Unajua kwa muda mrefu nilikuwa napendelea kunywa juice ya mapera ya Azam. Ilinishangaza sana kuona ladha yake haibadiliki. Kipindi hiki mapera yanapatikana, hivyo juice ya mapera kwa sasa ni home made. Imenishangaza mno kwa kuwa ladha yake ni tofauti mno na ile ya boksi! Kwa sasa ni zaidi ya mwezi natumia juice ya mapera ya hapa home.

    Kama upo karibu na shamba ni vizuri uende ukachume matunda na kama unataka juice tengeneza mwenyewe nyumbani na ule wakati huo huo. Lakini kuna wenzetu wapo mbali na mashambani hivyo jinsi ya kupata matunda na virutubishi vyake ni kuyachakata na kuyahifadhi kwenye maboksi au chupa. Kiukweli haiwezi kuwa 100% purity kama ya shambani lakini angalau ataambulia at least 60% purity kama yatachakatwa na kuhifadhiwa vizuri. Na hizi preservatives na additives zipo nyingi ambazo zimethibitika kutokuwa na madhara kwa mlaji na kuruhusiwa kwa kupewa namba.
    After all, ukichukua chungwa ukakamua juice na kuweka kwenye chupa bila kuweka preservatives ni bure kwani itaharibika muda si mrefu, hivyo kukabili upotevu wa matunda/vyakula wakati mwingine ni bora kuchakata na kuhifadhi ili matunda yaweze kukaa kwa muda mrefu na kuwafikia watu wengi na pia kupunguza uharibifu wa chakula!
    Labda hapa hoja ni udanganyifu wa kusema 100% purity wakati sio kweli...

    Siko kuharibu biashara za watu ila mi nawashangaa sana wanaokunywa juice za Azam sijuhi anaweka sukari nusu kilo kwa box. Utasema yametengenezwa ili yawe diluted. Kuna watu unakuta wanaparamia box zima daily; kwa nini usinenepeane.

    Mimi ni mtu wa kutengeneza juice nyumbani, na wala si expensive kama kununua za box. 2500 napata matunda kibao mchanganyiko na tunakunywa nyumba nzima

    A roselle drink

    In the Caribbean sorrel drink is made from sepals of the roselle. In Malaysia, roselle calyces are harvested fresh to produce pro-health drink due to high contents of vitamin C and anthocyanins. In Mexico, 'agua de Flor de Jamaica' (water flavored with roselle) frequently

    called "agua de Jamaica" is most often homemade. Also, since many untrained consumers mistake the calyces of the plant to be dried flowers, it is widely, but erroneously, believed that the drink is made from the flowers of the non-existent "Jamaica plant". It is prepared

    by boiling driedsepals and calyces of the Sorrel/Flower of Jamaica plant in water for 8 to 10 minutes (or until the water turns red), then adding sugar. It is often served chilled. This is also done in Guyana, Antigua, Barbados, Dominica, Grenada, Jamaica and Trinidad and Tobago where it is called 'sorrel'. The drink is one of several inexpensive beverages (aguas frescas) commonly consumed in Mexico and

    Central America, and they are typically made from fresh fruits, juices or extracts. A similar thing is done in Jamaica but additional flavor is added by brewing the tea with ginger and adding rum. It is a popular drink of the country at Christmas time. It is also very popular in

    Trinidad & Tobago but cinnamon and cloves are preferred to ginger. In Mali, Senegal, The Gambia, Burkina Faso and Benin calyces are used to prepare cold, sweet drinks popular in social events, often mixed with mint leaves, dissolved menthol candy, and/or various fruit flavors. The Middle Eastern and Sudanese drink "Karkade"(كركديه) is a cold drink made by soaking the dried Karkade flowers in cold

    water over night in a refrigerator with sugar and some lemon or lime juice added.It is then consumed with or without ice cubes after the flowers have been strained.In Lebanon, sometimes toasted pine nuts are tossed into the drink.

    With the advent in the U.S. of interest in south-of-the-border cuisine, the calyces are sold in bags usually labeled "Flor de Jamaica" and

    have long been available in health food stores in the U.S. for making a tea that is high in vitamin C. This drink is particularly good for people who have a tendency, temporary or otherwise, toward water retention: it is a mild diuretic.


    In addition to being a popular homemade drink, Jarritos, a popular brand of Mexican soft drinks, makes a Flor de Jamaica flavored carbonated beverage. Imported Jarritos can be readily found in the U.S.


    In the UK the dried calyces and ready-made sorrel syrup are widely and cheaply available in Caribbean and Asian grocers. The fresh calyces are imported mainly during December and January in order to make Christmas and New Year infusions, which are often made into cocktails with additional rum. They are very perishable, rapidly developing fungal rot, and need to be used soon after purchase – unlike the dried product, which has a long shelf-life.
