    MAHITAJI


    • 360 gram Arborio Rice ( Risoto rice)
    • 1/2 kijiko kidogo cha chai Saffron strands
    • 2 kijiko kikubwa cha chakula siagi
    • 1 kitunguu maji kikubwa chop chop
    • 1 kijiko kidogo cha chai kitungu swaumu cha kusagwa
    • 1 kwaruza limao maganda yake (zest Lemon)
    • 1.2 lita ya maji
    • 5 gram chumvi
    • 3 vegetable cubes
    • 2 glasi za white wine
    • 5 gram pili pili manga
    • 20 gram Vegetarian Parmesan Cheese shaving
    • 2 kijiko kikubwa cha chakula Extra Virgin Olive Oil (sio lazima)
    • Parsley kwa ajili ya kupambia

    JINSI YA KUPIKA
    Chukua sufuria kisha chemsha maji lita moja na nusu pia weka vegetable cubea ili uweze pata vegetable stock na hakikisha unafunika ili yachemke mapema.

    Weka saffron katika bakuli pamoja na maji yamoto kijiko kimoja mpaka iyeyuke na kubadilisha rangi.

    Weka siagi katika sufuria ikishayeyuka weka kitunguu maji na kitungu swaumu endelea kukaanga kwa dakika 3 mpaka iwe laini.

    Kisha chukua wali wako mkavu hutakiwi kuuuosha kawaida huwa unakua msafi sana. Weka ndani ya sufuria na endelea kukaanga.

    Endelea kukaanga mpaka utaona unabadilika rangi na kunukia harufu nzuri.

    Kisha weka glasi moja ya mvinyo mweupe ( white wine) pamoja na safrom acha iendelee kuiva pole pole. Kumbuka safron sio lazima kuweka.

    Hakikisha unaendelea kukoroga na chakula chako kisishike kwa chini au kuungulia.

    Weka gram 600 za vegetable stock katika yale maji uliochemsha mwanzo katika wali wako na koroga kisha acha maji yakaukie kumbuka wakati unasubiri maji ya kauke unatakiwa mara kwa mara unaendelea kukoroga.

    Kisha ongeza kikombe kimoja cha white wine endelea kukoroga. Hakikisha kila maji yanapokauka we unaendelea kuongeza kikombe kimoja yakikauka tena unaongeza kikombe kimoja mpaka wali wako uive.

    Baada ya wali wako kua creamy sasa weka chumvi na pili pili manga kisha koroga vizuri.

    Mwagia kwa juu na Parmesan cheese, parsley. Mimi na familia yangu huwa tunapenda kunyunyiziakwa juu Extra Virgin Olive oil chakula kikiwa tayari kwenye sahani inasaidia kuongeza moistness na richness kwenye risotto nikiwa pembeni na Crusty bread.
