      Virutubisho Vinavyopatikana Katika Vyakula

      Mwili wa binadamu (na viumbe vingine hai) ili uweze kukua na kunawili unahitaji vitu vinavyojulikana kama virutubisho au viinirishe. Kwa lugha ya kigeni virutubisho vinaitwa "Nutrients". Virutubisho hivyo vinapatikana katika vyakula mbalimbali.

      Vile vile tunajuwa kuwa, virutubisho vyote hugawanywa katika makundi makuu sita, ambayo ni kabohaidreti (wanga, sukari na nyuzi nyuzi), protini, mafuta, vitamini, maji na madini (minerals). Ili mwili uweze kukua na kunawili vizuri lazima upate virutubisho vyote.

      Chakula (kama cha asubuhi, mchana, jioni au usiku) chenye virutubisho vyote sita hujulikana kama mlo kamili au "balanced deit" kwa lugha ya Waingereza. Kwa vile takribani vyakula vyote tunavipata kwa gharama kubwa (fedha au kazi), swala la uchaguzi wa vyakula haliepukiki.

      Pia unategemea mazoea ya mlaji, radha na sura ya chakula, virutubisho na mambo kadhaa wa kadhaa. Ili kufikia uchaguzi sahihi wa vyakula, elimu ya chakula gani kina virutubisho gani ni ya msingi. Jukwaa La Mapishi, (Food Coner) linakusudia kukidhi haja hiyo kwa wasomaji wote. Katika kukidhi haja hiyo, vitataja aina ya chakula, virutubisho vya msingi na virutubisho vya ziada vinavyopatikana katika vyakula hivyo.

      Nafaka:
      Nafaka ni vyakula vya punje punje au chembechembe kama vile mtama, mahindi, ngano, uwele (mawele), mpunga n.k. Virutubisho vya msingi vinavyopatikana katika vyakula vya nafaka ni wanga, sukari na nyuzi nyuzi. Virutubisho vya ziada ni Protini, vitamini (kundi la B) na baadhi ya madini.

      Vyakula jamii ya mizizi na matunda:
      Vyakula jamii ya mizizi (starchy roots) ni kama vile viazi (vitamu, mviringo, n.k) mihogo, n.k. Virutubisho vya msingi vinavyopatikana katika vyakula jamii ya viazi na matunda ni wanga, sukari na nyuzi nyuzi (dietary fibres). Zaidi ya virutubisho hivyo ni baadhi ya madini, vitamini C (kama chakula hicho siyo kikavu) na vitamini A (kama chakula hicho kinarangi ya njano).

      Vyakula jamii ya maharage:
      Vyakula jamii ya maharage nikama vile maharage ya kawaida na yale ya soya, kunde, choroko, n.k. Virutubisho vya muhimu katika kundi la vyakula vya hapo juu ni wanga, protini na nyuzi nyuzi. Virutubisho vya ziada ni vitamini (kundi B) na madini.

      Mbegu za mafuta:
      Mbegu za mafuta ni kama vile alizeti, pamba, ufuta, nazi, mawese (chikichi), kweme, maboga, tikiti maji, matango, n.k. Virutubisho vinavyopatikana kwa wingi katika mbegu za mafuta ni mafuta, protini na nyuzi nyuzi. Ziada kundi B. (B- Vitamins).

      Nyama/Samaki:
      Virutubisho vya msingi katika nyama au samaki ni protini, mafuta na madini ya chuma. Virutubisho vingine ni vitamini vya kundi B na madini (zaidi ya yale ya chuma).

      Ini:
      Ini linatupa virutubisho vya msingi vya protini, madini ya chuma na vitamini.

      Maziwa:
      Virutubisho tunavyovipata kwa wingi katika maziwa ni mafuta, protini, baadhi ya madini na vitamini.

      Mayai:
      Mayai yana virutubisho vya msingi vya protini na vitamini. Zaidi ya hivyo ni mafuta na madini (siyo ya chuma).

      Mafuta:

      Mafuta kama chakula yanatupa mafuta kama kirutubisho cha msingi. Zaidi ya hicho ni uwezekano wa kupata vitamini A.

      Mboga za majani:
      Mboga za majani hasa zile za kijani zinavirutubisho vya msingi vya vitamini A, C na B, Zaidi ya hivyo ni protini, madini na nyuzi nyuzi.

      Matunda jamii ya machungwa:
      Matunda jamii ya machungwa ni machungwa, machenza, n.k virutubisho vya msingi tunavyovipata kutoka katika matunda jamii ya machungwa ni sukari, vitamini A na C. Zaidi ya hivyo ni madini na nyuzi nyuzi.

      Namna Ya Kutayarisha Na Kupika


      1. Tia unga kwenye sinia au bakuli kubwa lilo na nafasi, changanya na chumvi, mafuta ya zaituni, samli 150g, iliki, mimina maji ya moto kwa kipimo cha kikombe kila unapovuruga unga.
      2. Unga uwe mwepesi unapoganda kuwa donge moja kubwa. Uwache kwa muda wa dakika 20 – 30 ukiwa umeufinika ili unga ulainike.
      3. Katakata madonge makubwa yenye ukubwa wa chungwa ili uweze kutoa kila donge chapati mbili. Ukimaliza hapa weka madonge kwa muda wa dakika 15 ukiwa umefinika bila ya kuingia upepo ndani.
      4. Sukuma donge ukiwa umelimwagia unga mkavu juu, liwe mviringo. Unaweza kutumia kifimbo hata chupa kusukumia madonge ikiwa huna kifimbo juu ya meza au kwenye kibao maalumu cha chapati.
      5. Sukuma donge moja mpaka liwe duwara jembamba.
      6. Paka samli kama kijiko kimoja cha kulia, ukihakikisha umepaka duwara lote.
      7. Kunja lile duwara kama mfano wa kamba, huku unazungusha kama kamba ili iwe ndefu kidogo.
      8. Zungusha ile kamba iwe mviringo. Funika na kitambaa kisafi cha jikoni ambacho kimajimaji kidogo.
      9. Endelea namna hii mpaka umalize madonge yote.
      10. Sukuma chapati iwe mviringo kama nchi 7 hivi
      11. Weka chuma cha kuchomea chapati jikoni moto mdogomdogo.

      Smile Jinsi ya kupika wali aina ya Risotto



      MAHITAJI


      • 360 gram Arborio Rice ( Risoto rice)
      • 1/2 kijiko kidogo cha chai Saffron strands
      • 2 kijiko kikubwa cha chakula siagi
      • 1 kitunguu maji kikubwa chop chop
      • 1 kijiko kidogo cha chai kitungu swaumu cha kusagwa
      • 1 kwaruza limao maganda yake (zest Lemon)
      • 1.2 lita ya maji
      • 5 gram chumvi
      • 3 vegetable cubes
      • 2 glasi za white wine
      • 5 gram pili pili manga
      • 20 gram Vegetarian Parmesan Cheese shaving
      • 2 kijiko kikubwa cha chakula Extra Virgin Olive Oil (sio lazima)
      • Parsley kwa ajili ya kupambia


      JINSI YA KUPIKA
      Chukua sufuria kisha chemsha maji lita moja na nusu pia weka vegetable cubea ili uweze pata vegetable stock na hakikisha unafunika ili yachemke mapema.

      Weka saffron katika bakuli pamoja na maji yamoto kijiko kimoja mpaka iyeyuke na kubadilisha rangi.

      Weka siagi katika sufuria ikishayeyuka weka kitunguu maji na kitungu swaumu endelea kukaanga kwa dakika 3 mpaka iwe laini.

      Kisha chukua wali wako mkavu hutakiwi kuuuosha kawaida huwa unakua msafi sana. Weka ndani ya sufuria na endelea kukaanga.

      Endelea kukaanga mpaka utaona unabadilika rangi na kunukia harufu nzuri.

      Kisha weka glasi moja ya mvinyo mweupe ( white wine) pamoja na safrom acha iendelee kuiva pole pole. Kumbuka safron sio lazima kuweka.

      Hakikisha unaendelea kukoroga na chakula chako kisishike kwa chini au kuungulia.

      Weka gram 600 za vegetable stock katika yale maji uliochemsha mwanzo katika wali wako na koroga kisha acha maji yakaukie kumbuka wakati unasubiri maji ya kauke unatakiwa mara kwa mara unaendelea kukoroga.

      Kisha ongeza kikombe kimoja cha white wine endelea kukoroga. Hakikisha kila maji yanapokauka we unaendelea kuongeza kikombe kimoja yakikauka tena unaongeza kikombe kimoja mpaka wali wako uive.

      Baada ya wali wako kua creamy sasa weka chumvi na pili pili manga kisha koroga vizuri.

      Mwagia kwa juu na Parmesan cheese, parsley. Mimi na familia yangu huwa tunapenda kunyunyiziakwa juu Extra Virgin Olive oil chakula kikiwa tayari kwenye sahani inasaidia kuongeza moistness na richness kwenye risotto nikiwa pembeni na Crusty bread.
